Sambar Vada is a delicious combination of crispy medu vadas (fried lentil doughnuts) soaked in a warm, flavorful sambar (spiced lentil and vegetable stew). It's the perfect harmony of textures and tastes—soft inside, crisp outside, and full of aromatic spices.

    Ingredients – Sambar Vada by Halwai Chef

    For the Vada:

• Urad Dal (Split black gram) – 1 cup (soaked overnight)

• Green Chilies – finely chopped

• Ginger – grated

• Black Peppercorns – optional

• Curry Leaves – chopped

• Asafoetida (Hing) – a pinch

• Salt – to taste

• Oil – for deep frying

    For the Sambar:

• Toor Dal (Split pigeon peas) – 1 cup

• Tamarind Pulp – 2 tablespoons

• Drumsticks, Carrots, Pumpkin – chopped (optional mix of vegetables)

• Onion & Tomato – sliced

• Sambar Powder – 2 tablespoons

• Turmeric Powder – ½ tsp

• Mustard Seeds, Dry Red Chilies, Curry Leaves – for tempering

• Asafoetida (Hing) – a pinch

• Coriander Leaves – for garnish
